My grandmother taught me this trick and it works great...
she takes the candied fruit and dredges it in flour or cake mix flour before putting it in the mix... somehow the flour sticks to the candy and keeps them from sinking to the bottom of the cake... its amazing, but works... and you dont see floured candy bits afterwards, its just absorbed into the batter as normal...
Though my plum cake tastes really good, the candied peel and tutti frutti always sink to the bottom. How can I
Here is what I would suggest.
When you Make Your cake, set the Candied Peel and Tutti frutti aside temporarily. (Adding later) Place your cake in the oven and bake for the first 10 minutes, then carefully pull the shelf out of the oven and sprinkle these two ingredients on the top.
They will sink in somewhat but will not fall to the bottom.
The reason they are sinking, is that they are heavier than the mix and like anything, they sink.
Good luck and have a wonderful Holiday!!

Reply:*Just coat or dip..... the peel and tuti fruti with some dry flour and then add to the cake mix....... before baking !!!!
They will not sink but remain afloat !!!!
